You can roast a chicken in a slow cooker. I don't think it's as good as using an oven because the skin is soggy rather than crispy; but the meat is beautifully moist and falls off the bone. Good for salads, tacos, sandwiches, etc.
Get a pack of chicken drumsticks, dredge them in your favorite spices, place them on loosely crumpled balls of aluminum foil in the slow cooker, cook on low for 6-8 hours. The foil lets the heat circulate and the fat drip, so the drums get a slightly crispy exterior. Not the same as frying, but still good.
I like sushi-inspired rice bowls -- white rice, cold cooked shrimp, diced avocado and cucumber, a drizzle of soy sauce or ginger dressing. Not in the same league as a poke bowl, but filling and you can customize it.
Mash kidney and/or black beans; add lime juice, taco seasoning, a bit of soy sauce and ketchup (only a little, otherwise it's too sweet); microwave until heated through; use for tacos, burritos, nachos, whatever. It's filling and relatively healthy.
