So yeah, I put an entire post into the title. But we just got an 8qt Instant Pot. I need things to do with this behemoth, and I definitely want to find a good macaroni and cheese, as I haven't had homemade mac and cheese in years! Help a friend out?

I love my Instant Pot.  It's great for anything that is a braise or stew or something like that.  It's a little faster than stovetop or oven, but the real advantage is that things just come out even better.  Makes rice and hard boiled eggs very nicely, too, although I wouldn't buy it just for that.

Not good for anything you want crispy, like chicken skin. 

I haven't made macaroni and cheese, so I can't help you there.  Here is a recipe for lamb shanks (my favorite!!!) I found that we loved.  I suggest using a little more liquid; I did not need to thicken the sauce per the optional directions.

My MIL gave me some money for Christmas and birthday that I have been hoarding to use to buy an Instant Pot but they've only had the 3 quart one on sale.  I want the 6-8 quart!  I never cook for just one meal; leftovers are my friend.  :)

Precisely why I got the 8qt. I would much rather eat the same thing four meals in a row than cook four times!

I have an Instant Pot but I haven't used it much so I am following this thread for ideas.

I do have a great mac & cheese recipe though - it's just not in the pot. It's Alton Brown's and my husband makes it every time we smoke ribs. It's great.

Sadly, no. Nothing against people who use it, but it's not a good fit for me.

It was, hands down, the easiest mac and cheese I've ever made. It was slightly gritty (if anyone's ever had microwave mac and cheese, that's what I'm talking about), which may just be the choice of cheese I used. But it was so very, very good.
