With all the snow we've been having, here's a staple from my house. Freezes well and makes awesome sandwiches when sliced thin after chilling.
Mom's Meatloaf
1 lb ground beef
1 onion, finely chopped
1/2 green pepper, finely chopped (I use any kind of pepper; I've used hot peppers for a little kick - 1 hot pepper, 1 regular when making a triple batch)
1/4 cup ketchup
1 cup bread crumbs (or oatmeal)
salt
pepper
dash of Worchestershire sauce
1 egg
1 tsp horseradish (I've never used it but it was in Mom's recipe)
Mix all the ingredients together well and shape into a loaf in a roast pan. Brush the top with barbecue sauce or more ketchup. Bake at 300°F for 1-1/2 hours, until cooked through.
Variation:
Use turkey burger, use chopped dried cranberries in place of the pepper, skip the ketchup, horseradish and Worchestershire, add an extra egg, add sage and savoury.
I use the same basic recipes for my burgers. I cook the turkey burger on an indoor grill, rather than outdoor, because they are leaner and tend to get dried out on the outdoor grill. And/or they stick.
