What's your signature dish?

Do you have a dish that you always make for company or for a pot luck? Or something that people ask you to make or that you are sort of "known for"? Or just your favorite dish to make for your own self or family?

Let's share some recipes.
I'll start.

When I was very first married, I came across an article in Parade magazine that shared a few of the recipes served at Ronald Reagan's inauguration. One of them, cheese straws, sounded good and I tried them. They became a sort of signature appetizer item for me as I made them many times over the years. My secret though, was to add a bunch more cayenne pepper than the recipe called for. That gave them a very nice heat kick.

The whole recipe was just shredded cheddar, flour, butter and 1/8 tsp cayenne. Well, I probably put in something like 1-1/2 to 2 teaspoons, I never really measured, I just added a bunch. Yeah, they were hot but good. I haven't made the recipe in years but here is a link to what appears to be the recipe. The secret is that the consistency of the dough can be different every time, depending on the actual brand of cheese used, so you just add tiny bits of water till it is right.

I have a couple that I frequently make for potlucks.

Maple baked beans.  This was my Mom's, from as far back as I can remember.  She got the recipe out of a cookbook put out by the Ontario Maple Syrup Producers.  I usually make a batch of tea biscuits to go with them.

The other is wild rice salad.  It has cut up apples in it and the dressing is mayonnaise/miracle whip and sour cream.  I use toasted almond slivers as a garnish.  If you use a nice, firm, somewhat tart apple?  Sooo good.

My mom is known for her homemade cookies, several varieties, and is always asked to bring them.

She doesn't make up recipes, she just gets them from your average cookbook, like Betty Crocker. The main secret is, she just doesn't bake them as long as the recipe says. Like if the recipe says, "Bake 16-18 minutes," she sets the timer for 8 minutes and checks on them by eye after that, until they're just barely done. They're much softer and moister than what you usually get. Of course it's not good if you like crisp, crunchy cookies.

The other thing is, we like flavorful cookies. So if it's something like gingerbread, with spices in it, we add a larger volume of each spice than they say to. No bland cookies for us!

Cookies seem to be very popular if you make less usual varieties. Like, most people do chocolate chip and peanut butter, and that kind with the Hershey's kiss on them. We do, like, pumpkin spice cookies, molasses cookies, double chocolate almond coconut cookies, that kind of thing. All pretty simple all-in-one-mix drop cookies, really.

I have a few things.

For holidays, I make my own Gluten Free crock-pot stuffing.

Other times, it's my mini-cheesecakes, gluten free cakes/cupcakes or my cheese ball.
